What are some nutritious lunches for a 1 year old?

Fruit is always good, and cheese too, if you've started giving dairy. Mac and cheese can be a good one, and you can make it with whole wheat pasta and good cheese. Lasagna is good too. Sauteed and blended spinach is good, whole wheat crackers. Or, just give what you had for dinner the night before, but cut it very small.
